SUNDIAL COFFEE ROASTERS

Batch 041 · Roasted 06:12 Monday

Every batch has a curve.

SUNDIAL roasts twelve kilos at a time, logs every second of the roast, and prints the curve on the bag. This week's lots are on the counter — read them the way we roast them: time against temperature.

205 °C at the drop-in. Green beans hit the hot drum and the temperature plunges to its turning point — the coldest moment of the batch.

    Ends at 1:20.
  2. 02 · Drying1:20 – 4:00 · 156°C

The beans give up their water, turn from sage to hay, and the room starts to smell like bread and hay bales.

    Ends at 4:00.
  3. 03 · Maillard4:00 – 8:42 · 196°C

Sugars and amino acids trade places. Caramel, toast and colour arrive together — the longest stretch, and where the character is built.

    Ends at 8:42.
  4. 04 · First crack8:42 – 10:00 · 203°C

At 196 °C the beans audibly crack open. This is the clock everything else is measured from: development starts here.

    Ends at 10:00.
  5. 05 · Development10:00 – 11:30 · 208°C

Every second after first crack deepens body and trades acidity for sweetness. We stop this lot at 24% development — bright, but round.

    Ends at 11:30.
  6. 06 · Drop11:30 · 208°C

Out of the drum at 208 °C, cooled in three minutes, rested overnight, bagged with the curve printed on the label.

    Ends at 11:30.

§ 03 — This week's lots

Four lots. Each one with its curve printed on the bag.

We roast to the bean, not to a colour chip. Every bag carries the batch's actual log — charge temperature, first crack, drop, development.

§ 04 — The bench

The curve ends in your cup. Here's how we get it there.

Three recipes we actually use at the counter — one per brewer, dialled in for this week's lots. Pick a method; the numbers come with it.
